Why direct bookings beat commissions

A booking that comes through someone else's app usually costs you twice: once in commission, and again in a guest you never get to know.

Listings bring new guests, and that is worth something. But when a regular — someone who already knows your address and your best table — books through someone else's app, you pay for a guest you had already won.

And the cost isn't only the commission. The name, the number, the birthday and the visit history often stay in that app, not with you. You can't thank that guest, invite them back or tell them about tonight's offer, because as far as your records go, they were never there.

This isn't an argument for leaving the aggregator apps. It's an argument for making sure the guests who already know you book with you.

What an app booking really costs

Work it out for your own restaurant. Take everything you paid for app bookings last month — commission, fees, paid placements — and divide it by the covers that came through the apps. That is your cost per cover.

For example: a restaurant in Gurugram that pays ₹45,000 in a month for 600 app covers is paying ₹75 a cover before the guest has ordered anything. Now ask how many of those 600 were regulars who would have come anyway. Each of them is ₹75 you didn't need to spend.

Five ways to win the booking back

A guest who books with you is your guest

A booking made on your own page comes with a name and a number that belong to your restaurant. One made elsewhere belongs, first, to whoever took it.

The fix: put your own booking link everywhere a guest already looks for you: your maps listing, your social profiles, your WhatsApp replies, the bill and the table card.

The phone is still the busiest booking line

Many guests in India still simply call — and the calls come exactly when everyone is busiest. A call that rings out at 8:30 on a Saturday is a table that books somewhere else, often through an app.

The fix: make sure every call is answered, at every hour, and that the booking lands in the same list as all the others — not on a notepad by the phone.

The cheapest booking is the one a guest makes with you directly.

Know who is coming back

A birthday, a favourite table, a guest who always orders the same thing — that is what makes a regular feel like one. It only helps if it is written down where the team can see it.

The fix: keep each guest's visits and occasions with the booking, so the next host on shift knows them too.

Make booking direct the easiest way in

Once a guest has found you, the next booking is yours to lose. If booking direct is harder than tapping an app, they will tap the app.

The fix: a few taps on a phone, no payment to hold a table, and an easy way to change or cancel without calling.

Look after the details guests give you

Names and numbers are useful only if guests trust you with them. Nobody books direct twice with a restaurant that floods their phone with messages.

The fix: ask before you message, send only what the guest asked for, and decide who on your team can see guests' numbers.

Where the apps still help

Keep your listings for discovery: guests who have never heard of you, visitors from out of town, people browsing for somewhere new on a Friday afternoon. Read the reviews there and answer them.

What changes is the second visit. Once a guest has eaten with you, give them every reason to come back through your own link and your own phone — the app is where you are found, not where your regulars should have to book.

A direct-booking checklist

Go through this once a month. Most of it costs nothing.

  • Your own booking link on your maps listing, social profiles and WhatsApp replies.
  • The same link on every bill and table card.
  • Booking takes under a minute on a phone, with no payment to hold a table.
  • Every call answered — at 11 PM and in the middle of the rush too.
  • Phone bookings go into the same list as online ones.
  • Occasions, allergies and seating wishes written on the booking.
  • Guests can change or cancel without calling.
  • Once a month: how many app bookings were regulars?
  • Guests are messaged only with their permission.

How Nowish does it

Your own restaurant website, with your name on it. Guests book with you, not through an app that charges for every table — date, time and guests, plus the occasion and where they would like to sit.

Kiln House's own website on a phone, from the Nowish demo: Book a table at the top, open now until 11 PM in Sector 29, Gurugram, and today's offer.
The demo restaurant's own website — Book a table is at the top of every page.

Guests who call reach the AI phone host. It answers every call, 24×7, in Hindi or English, says honestly that it's the restaurant's AI host, notes birthdays, allergies and seating wishes, and hands over to your team when needed. The booking appears on its own, a second after the call — your team confirms it with one tap.

Booking a table on Kiln House's website: today at 8:00 PM for 2 guests, name and mobile number, an optional occasion, and Confirm booking — no payment needed.
Booking direct: no payment needed, and free to change or cancel in My visits.

Every name, number and visit belongs to your restaurant. In My visits, guests see their upcoming bookings, their past visits and the bill for each.

None of this means leaving the listings. It means the guests who already know you book with you — and stay your guests.
